After the holidays, the cold of winter brings us two culinary luxuries: truffles and woodcocks, both now at their best. Another culinary gem, early peas, has also appeared in our local markets, along with cabbage, citruses, calçot onions and artichokes, a vegetable treasure from our fields, carefully grown and harvested by organic and biodynamic farmers.
